If you are like most garlic lovers we know, then you may be wondering...what are garlic scapes? How do you use them? Can you eat them? Why are these Deliereous people SO Deliereously excited that it's scape season?? We are here to answer some of the mysteries above, with an overview of garlic scapes!
What are Garlic Scapes?
The scape is the stem and flower of the hardneck variety of garlic. The entire part of the stem and flower are edible and can be used in any cuisine!
They have a mild garlic flavor and the appearance is similar to a scallion. Once cooked, they have a dense and “meaty” texture.
How to use:
Any way you would use a green onion, chive or garlic clove.
Chop and add to a fresh salad
Finely chop, put in ice cube trays, add olive oil and freeze. Once frozen take out and use for any of your sautéing needs! We recommend using the oil in a cast iron pan or even on a flat grill.
Rough chop and use when making stocks for soups.
Fine chop and use in your soups.
Use in vinaigrettes, on pizza, with butter in a pan (think asparagus)…the options are endless!
How to Store:
For fresh use, keep in a loose brown paper bag with slight ventilation in a cool, dry place.
Store in the refrigerator for longer fresh use (2-3 weeks).
Cut in pieces (fine or rough chop) and keep in the freezer, in a freezer safe bag for up to 6+ months.
The benefits of garlic scapes are plentiful! They are a great source of Vitamin C, protein and calcium. Just like a garlic clove, scapes could also help prevent heart disease, high cholesterol and high blood pressure. In addition, they help provide immune system support and reduce inflammation.
